Ingredients
1 cup heavy cream
3 egg yolks
1 cup grated parmesan, plus more for garnish
1 teaspoon grated lemon zest, plus 2 tablespoons lemon juice (from 1 lemon)
1 pound fettucine
Coarse salt and ground pepper
1. Whisk cream, egg yolks, Parmesan, lemon zest, salt, and pepper in a medium bowl until combined.
2. In a large pot of boiling salted water, cook pasta according to package instructions. Reserve 1 cup pasta water; drain pasta and return to pot.
3. Immediately stir in egg and cheese mixture until well combined adding enough pasta water to create a thin sauce that coats pasta.
4. Add lemon juice and season to taste with salt and pepper. serve immediately, garnished with grated Parmesan cheese.
